Pastéis de Belém....! Ora pois... (Portuguese Custard Tarts!)

   Para os descendentes da terrinha e apreciadores da cozinha portuguesa..... Apresentamos uma das mais deliciosas iguarias da cozinha lusitana!!!
    Os famosos e deliciosos ...PASTÉIS de BELÉM....


Vamos a receita!?
Dificuldade da Receita: 


Para a massa, utilizaremos a massa folhada comprada pronta e congelada.
Deixe a massa descongelar por 30 minutos, abra a massa folhada e cubra o fundo de forminhas de empadas ou ainda pode ser usada uma assadeira para muffins.


Para o recheio:
# 375 ml de creme de leite fresco
# 6 gemas
# 6 colheres de açúcar


    Misture todos os ingredientes em uma panela, leve ao fogo em banho-maria, mexendo sempre até engrossar. Deixe esfriar, coloque nas forminhas. Antes de colocar o recheio fure a massa com um garfo.

    Leve ao forno pré- aquecido em 180°, até ficarem douradas, por aproximadamente 30 minutos.

    

    Após pronto, polvilhe uma leve camada de açúcar de confeiteiro e canela. 
Os pastéizinhos podem ser servidos com chantilly ou ainda acompanhado com sorvete de baunilha.

Recipe Difficulty: 
For the base, we gonna use the frozen puff pastry.

For the filling:
# 375 ml cream
# 6 egg yolks
# 6 tablespoons sugar

     
Mix all ingredients in a saucepan, bring the fire in a double boiler,stirring constantly until thickened. Let cool, place in pan. Before putting the filling in the pastry base stick with a fork.
     Bake in preheated oven at 180 degrees until golden brown, for about 30 minutes.
 
     
Once ready, sprinkle a light layer of powdered sugar and cinnamon.
The Portuguese Custard Tarts can be served with whipped cream or served with vanilla ice cream.

Banoffee Pie !!!

    Essa receita é simplesmente uma combinação muito feliz, deu muito certo é o melhor... é muito fácil e rápida de ser feita!


Vamos a receita?!
Dificuldade da receita: 


Para a massa:  
# 1 pacote de biscoito maizena 
# 100 g de manteiga


Triture as bolachas em um liquidificador ou processador até virar uma farinha. Coloque em um recipiente e adicione a manteiga, que deve estar em temperatura ambiente. 


Depois de pronto, coloque o conteúdo em uma forma de fundo removível e forre o fundo, colocando leve pressão, para que a massa fique no lugar. Se a massa estiver esfarelando, é porque ainda está faltando manteiga. NÃO FORRE AS LATERAIS DA FORMA!


Para o recheio:
# 4 ou 5 Bananas Médias cortadas em fatias
# 2 colheres de sopas de açúcar
# Canela para polvilhar
# 1 lata de doce de leite Nestlé.


Forre todo o fundo da forma onde colocamos a massa, com Doce de leite em seguida com as bananas fatiadas. Em seguida polvilhe o açúcar e canela.


Para a cobertura:
# 150ml de creme de leite fresco batido em ponto de Chantilly
# raspas de chocolate meio amargo
# 2 colheres de chá de café solúvel





Coloque o "Chantilly" sobre as bananas delicadamente para que as mesmas não sejam deslocadas, em seguida polvilhe o café e por último coloque as raspas de chocolate. 

Coloque para gelar! Aproximadamente 3 ou 4 horas os sabores se misturam e ela fica ainda melhor depois de algumas horas na geladeira.

Dicas para a Adega: Casillero del Diablo - CONCHA y TORO (Tips for the Cellar: Casillero del Diablo)

    A história de uma das marcas mais fortes do Chile começou em 1883 quando Don Melchor De Concha y Toro, um distinto advogado, empresário (que acumulou fortuna explorando minas de prata no deserto de Atacama) e político influente no país (incluindo eleições para deputado e senador e três passagens pelo Ministério da Fazenda), acompanhado de sua riquíssima mulher Emiliana Subercaseaux, fundou a vinícola com o nome de Marquês de Casa Concha, localizada na pré-cordilheira, perto da cidade de Santiago, com o objetivo de explorar o potencial da produção vitivinícola do vale do Rio Maipo, onde o clima era mediterrâneo e o solo aluvial. Ele importou as mais exclusivas mudas de uvas de Bordeaux, região francesa tradicional na produção dos melhores vinhos do mundo, plantou no vinhedo de Ponte Alta e contratou um importante enólogo francês, Monsieur de Labouchere, para preparar os seus primeiros vinhos. Nascia uma lenda.
    O maior e mais importante vinhedo do Chile foi pioneiro na produção de vinhos. Conta a história que uma praga devastadora arrasou as plantações na Europa de onde foram colhidas as mudas trazidas por Don Melchor. Por isso, apenas ali, no Vale do Maipo, encontram-se as raras parreiras com as uvas que produzem o famoso vinho Don Melchor, que conquistou os críticos internacionais da bebida. Os vinhos produzidos tiveram sucesso imediato. Porém, foi o emblemático Casillero del Diablo, feito da uva Cabernet Sauvignon, que projetou o vinho chileno para o mundo. Foi em 1891, que Don Melchor criou o que é hoje um dos vinhos mais conhecidos mundialmente. A lenda que cerca este mítico e aclamado vinho, transformou os vinhedos do Chile famosos no mundo inteiro. 
     
Um vinho cheio de mistérios 

    A lenda do vinho Casillero del Diablo, feito da uva Cabernet Sauvignon, começou há mais de cem anos, em 1891, quando o fundador da marca resolveu reservar para si os melhores vinhos das safras de suas vinícolas. Como forma de manter inalteradas as condições de temperatura e unidade, estes vinhos foram guardados ao fundo de uma magnífica adega subterrânea (em espanhol “casillero”), um depósito especialmente destinado a este fim. Passado algum tempo Don Melchor de Concha y Toro percebeu que estes vinhos estavam desaparecendo misteriosamente.
    Depois de inúmeras conversas chegou à conclusão que estavam sendo roubados por pessoas das redondezas. Diante disto, para cessar o sumiço dessa reserva preciosa, espalhou o boato de que o próprio diabo vivia dentro do porão no qual os vinhos estavam armazenados. A história funcionou. O medo afastou todos os ladrões, e, nunca mais, sequer uma garrafa voltou a desaparecer. Nascia assim o lendário vinho Casillero del Diablo (em espanhol, “a Adega do Diabo”). O mítico vinho seria lançado no mercado somente em 1963, sendo um dos principais responsáveis por projetar a Concha y Toro internacionalmente, vendendo todos os anos mais de 2.6 milhões de caixas no mundo inteiro. Atualmente a linha Casillero de Diablo é composta pelos vinhos tintos (Carmenére, Merlot, Cabernet Sauvignon, Shiraz, Pinot Noir e Malbec), brancos (Chardonnay, Sauvignon Blanc Riesling, Pinot Grigio, Viognier e Gewürztraminer) e rose (Shiraz), além da linha Reserva Privada (CS/Shiraz e Sauvignon Blanc) e um espumante. O famoso finho tem como slogan“Casillero del Diablo. Chilean wine legend” (“La Leyenda del Vino”).




Características: Brilhante cor vermelho escuro. Aroma de cerejas maduras, groselha e ameixas com um toque de baunilha. 
Bom corpo, taninos aveludados e harmoniosos. Leve sabor de ameixas e cerejas, generosamente mesclado ao toque defumado do carvalho americano

Harmonização : Carnes vermelhas, cordeiro, massas com molhos vermelhos, aves de caça, queijos.
Graduação Alcoólico: 13,5%
Esse vinho é um OTIMO custo benefício, super premiado e recomendado e pode ser encontrado em um preço bastante acessível. No Brasil, por exemplo, poder ser comprado por aproximadamente $ 30/35 (reais) e aqui em Dublin por aproximadamente $ 7/9 (Euros).

Cheesecake de frutas vermelhas! (Vanilla-Berries Cheesecake!)

    Esse cheesecake é uma receita adaptada, que deu MUITO certo! Ficou verdadeiramente uma delícia.. 


Vamos a receita?!


Dificuldade da receita: 


Para a massa:
# 1 pacote de biscoito maizena
# 100g de manteiga sem sal
# 1 colher de sopa de açúcar
# 1 colher de café de canela
# 1/2 xícara de amêndoas em fatias 


    Triture as bolachas em um liquidificador ou processador até virar uma farinha. Coloque
em um recipiente e adicione o açúcar, a canela e a manteiga, que deve estar em temperatura ambiente. Os ingredientes devem ser misturados delicadamente até que formem uma farofinha molhada. Coloque mais manteiga se necessário. Após os ingredientes misturados, adicione as amêndoas e novamente misture-os delicadamente.
    Depois de pronto, coloque o conteúdo em uma forma de fundo removível e forre o fundo e as laterais colocando leve pressão, para que a massa fique no lugar. Se a massa estiver esfarelando, é porque ainda está faltando manteiga.
   
Para o recheio:
# 450g de cream cheese Philadelphia
# 1 lata de leite condensado
# 3 ovos
# raspas de meio limão
# 1 vagem de baunilha


     Vamos bater tudo no liquidificador, mas lembre-se coloque sempre os ovos primeiro e bata-os sozinhos por 1 minuto. Adicione o cream cheese, o leite condensado e as raspas de limão e bata por mais 4 ou 5 minutos, enquanto isso, tire a baunilha da vagem. Corte-á  na metade, e raspe com a faca o conteúdo interno, será um pózinho úmido.   

    Adicione o conteúdo à mistura do liquidificador e bata por mais 2 minutos. 
    Despeje toda a mistura na assadeira que forramos anteriormente com a massa, e coloque no forno por 35/40 minutos a 180 graus. O Forno deverá estar pré-aquecido. Estará pronto quando estiver corado e firme.



Para a cobertura:
# 200g de morangos
# 100g de framboesas
# 100g de amoras
# 100g groselhas
# 3 ou 4 colheres de açúcar  

    Coloque em uma panela com o fogo baixo, as frutas e o açúcar e deixe ferver mexendo de vez em quando por 4 minutos, desligue o fogo e deixe esfriar.
    Separe algumas frutas cruas para decorar e incorporar os pratos.

    Lembrando, deve ser servido gelado!

Observações: 
    # Em alguns lugares é difícil de encontrarmos amêndoas fatiadas, a vagem de baunilha ou ainda as frutas vermelhas. A massa pode sim ser feita sem as amêndoas, a baunilha pode ser substituída por 1 colher de café de essência de baunilha e as frutas vermelhas se não encontradas, pode ser feito apenas com morangos, por exemplo. Funcionará muito bem também!

Recipe Difficulty: ✰ ✰ ✰

For the pastry:
# 1 packet of digestive biscuits
# 100g unsalted butter
# 1 tablespoon sugar
# 1 teaspoon cinnamon
# 1 / 2 cup flaked almonds

    Crush the biscuits in a blender or food processor. Place in a container and add the sugar, cinnamon and butter, which should be at room temperature. The ingredients should be mixed gently. Add more butter if necessary. After the mixed ingredients, add the almonds.

    When ready, pour the contents into a form of removable bottom and line the bottom and sides by placing light pressure to the pastry is in place. If the dough is crumbling, is because butter is still missing.
   
For the filling:
# 450g Philadelphia cream cheese
# 1 can of condensed milk
# 3 eggs
# Zest of half a lemon
# 1 vanilla pod


     Let's hit everything in a blender, but remember to always put first the eggs and beat for 1 minute alone. Add the cream cheese, condensed milk and lemon zest and beat for another 4 or 5 minutes, meanwhile, work in the vanilla pod. Cut it in half with a knife and scrape the inner content, it will be a wet powders.

    Add to the mix the contents of the blender and blend for 2 minutes.
    Pour entire mixture into the pan before lining with the pastry, and place in oven for 35/40 minutes at 180 degrees. The oven should be preheated. Will be ready when stained and firm.

For the topping:
# 200g strawberries
# 100g raspberries
# 100g blackberries
# 100g currants
# 3 or 4 tablespoons sugar

    Place in a pan with low heat, fruits and sugar and simmer stirring occasionally for 4 minutes, remove from heat and let cool.
    Separate some fruit to decorate and incorporate raw dishes.

    Remember, should be served cold!


Comments:
    # In some places it is hard to find flaked almonds, the vanilla bean or red fruits. The dough can be made but without the almonds, vanilla may be substituted for 1 teaspoon of vanilla and the berries can the replaced for only strawberries, for example. Work very well too!
